This certified organic defatted almond flour from Just Natural Organic has had a portion of its oil removed during processing, resulting in a lighter, drier flour with a lower fat content and a finer texture — the form preferred for French macarons, light almond cakes, and applications where a very smooth, non-greasy result is needed.
