Ground almonds are blanched almonds — with their skins removed — that have been finely milled into a moist, slightly coarse flour. These certified organic ground almonds from Just Natural Organic are the essential ingredient in classic baking: frangipane, Bakewell tarts, macarons, financiers, and virtually every French patisserie recipe. Unlike regular wheat flour, ground almonds provide richness, moisture, and a tender crumb without adding starch.
They are naturally gluten-free and high in Vitamin E, magnesium, protein (21g/100g), and healthy monounsaturated fats. Ground almonds also contribute to the characteristic dense, moist texture of flourless almond cakes that remain good for days without drying out.

What is the difference between ground almonds and almond flour?
Ground almonds and almond flour are often used interchangeably, but there is a subtle difference. Ground almonds are typically milled more coarsely from blanched almonds and have a slightly grainy texture. Almond flour (also called almond meal) is more finely milled and produces a smoother, more consistent result — preferred for macarons and fine pastry work. Can I substitute ground almonds for flour in any recipe?
Ground almonds cannot replace wheat flour 1:1 in most recipes because they lack gluten (which provides structure and rise) and contain much more fat (which makes batters heavier). They work best as a partial substitution (up to 30% of flour content) in cakes, or in recipes specifically designed to use them as the primary flour, such as flourless cakes, frangipane, and macarons.
