Black turtle beans are small, jet-black beans with an earthy, slightly mushroom-like, almost mineral flavour and a velvety texture. The signature bean of Cuban, Mexican, Brazilian, and Caribbean cooking — feijoada (Brazilian black bean stew), Cuban black beans and rice, and black bean tacos all rely on this distinctive bean. Recipe idea — Cuban Black Beans & Rice: Cook 250g black turtle beans until tender. Fry 1 onion, 4 garlic cloves, 1 green pepper, 1 tsp each cumin and oregano in olive oil. Add the beans and 200ml cooking liquid. Simmer 15 minutes. Add a splash of red wine vinegar and fresh coriander. Serve over white rice.
