Brown lentils are the most widely grown and mildest-flavoured lentil — a versatile, everyday pulse that holds its shape moderately well when cooked, making them suitable for both soups (where some breaking down is welcome) and salads. Recipe idea — Lentil Shepherd's Pie: Cook 250g brown lentils with 1 chopped onion, 2 carrots, 2 celery sticks, 400ml vegetable stock, 1 tin tomatoes, 1 tbsp Worcestershire sauce, and mixed herbs for 25 minutes. Transfer to an ovenproof dish, top with creamy mashed potato, and bake at 200°C for 25 minutes until golden. A genuinely satisfying plant-based version of a British classic.
