Roasted buckwheat (kasha) is the toasted, amber-coloured form of buckwheat groats — the version traditional in Eastern European, Russian, and Jewish cooking for centuries. These certified organic roasted buckwheat from Just Natural Organic have a distinctive deep, toasty, almost coffee-like flavour that develops during the roasting process, and a firmer texture that holds up beautifully as a side dish or in salads.
Like all buckwheat, kasha provides complete plant protein, manganese, magnesium, rutin, and is naturally gluten-free. The roasting process does not significantly change the nutritional profile but dramatically transforms the flavour.

Cook in a 1:2 ratio for 10–15 minutes. Use as a side dish in place of rice or couscous. Classic in Eastern European kasha varnishkes (with bow-tie pasta and onions). Use in stuffings, pilafs, and warm grain salads. Excellent with mushrooms, onions, and dill.
Recipe idea — Kasha with Mushrooms & Onions: Fry 2 large sliced onions in butter until golden (15–20 mins). Add 200g sliced chestnut mushrooms and cook 5 minutes. Meanwhile cook 200g roasted buckwheat in 400ml vegetable stock for 12 minutes. Combine with the onion-mushroom mixture, season generously with salt, pepper, and fresh dill. Serve as a side dish or stir through cooked pasta (kasha varnishkes). A deeply comforting Eastern European classic.
