Unroasted buckwheat groats are the whole, unprocessed seed of the buckwheat plant — despite its name, buckwheat is not related to wheat at all, but is a flowering plant (related to rhubarb and sorrel) whose seeds are naturally gluten-free and complete in protein. These certified organic unroasted buckwheat from Just Natural Organic are the raw, ivory-cream variety with a mild, slightly earthy flavour — far more neutral than their roasted counterpart (kasha) and therefore more versatile in cooking.

Buckwheat provides complete plant protein with all essential amino acids, particularly rich in lysine and arginine. It is also an excellent source of manganese, magnesium, copper, phosphorus, and the unique flavonoid antioxidant rutin — associated with cardiovascular health and capillary strength. Naturally gluten-free.

Certified organic by the Soil Association. Plastic-free, home-compostable packaging. Available in 500g.

Cook in a 1:2 ratio for 10–15 minutes for a fluffy grain. Use in grain bowls, salads, porridge, and as a rice substitute. Grind into flour. Sprout for use in raw salads. Use in Japanese soba noodle dishes.

 

Recipe idea — Buckwheat Breakfast Porridge: Soak 150g buckwheat groats overnight in cold water. Drain and rinse thoroughly. Blend with 200ml oat milk until smooth, or cook in 300ml water for 10 minutes and top with sliced banana, almond butter, berries, and a drizzle of honey. A naturally gluten-free, complete-protein breakfast with a mild, pleasant flavour.

Is buckwheat related to wheat?
No — despite the name, buckwheat (Fagopyrum esculentum) is entirely unrelated to wheat. It is a flowering plant in the Polygonaceae family, related to rhubarb and sorrel. The name comes from the Dutch "boekweit" (beech wheat) because the seeds resemble small beech nuts in shape. It is naturally and completely gluten-free.

What is the difference between unroasted and roasted buckwheat?
Unroasted (raw) buckwheat has a mild, slightly earthy, nutty flavour — very versatile in cooking. Roasted buckwheat (kasha) has a deep, toasty, almost coffee-like flavour — the version traditional in Eastern European and Russian cooking. Unroasted is better for porridge, flour, and neutral grain dishes; roasted is better as a side dish and in kasha.
