Raw cacao beans are the whole, unroasted seeds of the cacao tree (Theobroma cacao) — the origin of all chocolate. These certified organic raw cacao beans from Just Natural Organic are fermented and dried cacao seeds with their papery hull intact, providing the full, complex flavour of raw cacao alongside the highest possible nutrient and antioxidant content. Eating whole raw cacao beans is the most direct way to experience the original flavour of chocolate before any processing.

Extremely high in flavanols, iron, magnesium, manganese, copper, and zinc. Contains theobromine and phenylethylamine.

Certified organic by the Soil Association. Plastic-free. Available in 200g.

Eat as a snack (intensely bitter — not for everyone). Grind to make cacao paste or nibs. Use in raw chocolate making. Add whole to trail mix. Chop roughly for baked goods. Roast to make your own chocolate.

 

Recipe idea — Bean-to-Bar Home Chocolate: Roast 200g cacao beans at 120°C for 20 minutes, cool, remove husks by hand. Grind in a high-speed blender for 15–20 minutes until completely smooth and liquid (cacao paste). Add 50g coconut sugar and 50g cacao butter. Continue blending until silky. Pour into moulds, refrigerate. Making chocolate from whole beans — the most rewarding and educational food project available.

Are whole cacao beans safe to eat raw?
Yes — fermented and dried raw cacao beans are safe to eat whole. They are intensely bitter with a complex, fruity flavour and contain theobromine and small amounts of caffeine. Start with 1–2 beans; they are an acquired taste.

What is the hull?
The thin papery outer layer of the cacao bean (the hull or husk) can be removed before eating or grinding. It is edible but slightly fibrous. When making cacao paste or nibs, remove by cracking and blowing the husks away.

Is raw cacao gluten-free?
Yes — pure cacao contains no gluten.
