Raw cacao paste (also called cacao liquor or cacao mass) is made by grinding whole raw cacao beans to a smooth, thick liquid that solidifies at room temperature — 100% pure cacao with no additions, exactly as it comes from the bean. These certified organic raw cacao paste from Just Natural Organic contain both the cacao solids and cacao butter in their natural ratio, providing an intense, complex, bittersweet chocolate flavour used by chocolatiers as the starting point for premium chocolate making.

Recipe idea — Simple Raw Chocolate: Melt 100g cacao paste with 50g cacao butter and 3 tbsp maple syrup (or honey) over a bain marie at under 45°C. Stir until smooth. Add a pinch of sea salt and ½ tsp vanilla. Pour into moulds or onto baking paper. Refrigerate 30 minutes until set. Break into pieces. What is the difference between cacao paste, cacao butter, and cacao powder?
Cacao paste = whole ground cacao bean (cacao butter + cacao solids). Pressing the paste separates it into cacao butter (the fat) and cacao cake — which is then ground into cacao powder (the solids). Cacao paste contains everything; butter contains only fat; powder contains only solids.
