Raw coconut chips are simply dried, unsweetened flakes of mature coconut meat — with a satisfying snap and crunch, natural sweetness, and a clean coconut flavour that toasts beautifully. These certified organic raw coconut chips from Just Natural Organic are dried rather than desiccated — larger flakes that retain more texture and flavour than fine desiccated coconut.
Coconut is rich in medium-chain triglycerides (MCTs) — particularly lauric acid — which are metabolised differently from long-chain fatty acids and have been associated with antimicrobial properties and rapid energy availability. Coconut also provides manganese, copper, selenium, and dietary fibre.

Eat as a snack. Toast in a dry pan and scatter over porridge, yoghurt, or smoothie bowls. Use in granola, trail mix, or energy balls. Add to tropical desserts and ice cream. Use in coconut macaroons or coconut cake. Press into the outside of energy balls.
Recipe idea — Toasted Coconut Granola: Mix 300g rolled oats with 100g raw coconut chips, 50g pumpkin seeds, 50g sunflower seeds, 3 tbsp coconut oil (melted), 3 tbsp maple syrup, 1 tsp vanilla, and a pinch of salt. Spread on a tray and bake at 160°C for 25–30 minutes, stirring halfway. The coconut chips toast to a deep golden colour with an intense, caramelised coconut flavour.

What is the difference between coconut chips and desiccated coconut?
Coconut chips are larger, thicker flakes of dried coconut — they have more texture, a better snap when raw, and toast to a more impressive golden result. Desiccated coconut is finely shredded or powdered — better for incorporating into batters and doughs where texture isn't needed. For topping and snacking, chips are superior; for baking into mixtures, desiccated is more practical.
What are MCTs?
Medium-chain triglycerides are a type of saturated fat found particularly in coconut. Unlike long-chain fats, MCTs are absorbed directly into the portal vein and transported to the liver, where they can be rapidly converted to energy. Lauric acid (the dominant MCT in coconut) also has documented antimicrobial and antiviral properties.
Are these raw?
Yes — these are dried but not roasted. They have a lighter, fresher coconut flavour than toasted chips. For maximum flavour, toast briefly in a dry pan before using.
