Coconut flour is made from dried, defatted coconut meat — the byproduct of coconut milk production — finely milled into a dry, absorbent flour with a subtle, sweet coconut flavour. These certified organic coconut flour from Just Natural Organic are a grain-free, gluten-free baking flour rich in dietary fibre and providing a natural coconut sweetness to baked goods.
Exceptionally high in dietary fibre (39g/100g — one of the highest of any flour), medium-chain triglycerides (MCTs), manganese, and iron. Naturally gluten-free and grain-free. Very absorptive — use significantly less than other flours.
Certified organic by the Soil Association. Plastic-free. Available in 350g.
Use in small quantities (15–20% of flour blend). Replace 25% of flour in pancakes, cakes, and cookies. Combine with almond flour for coconut-almond bakes. Thicken smoothies and curries. Coat fish or chicken.
Recipe idea — Coconut Flour Pancakes: Mix 30g coconut flour, 3 eggs, 60ml coconut milk, 1 tsp honey, ½ tsp vanilla, and a pinch of salt. The batter will be thicker than usual — coconut flour absorbs liquid aggressively. Cook small pancakes (8–10cm) in a lightly oiled pan for 3 minutes per side on medium-low heat. Rich, slightly sweet, and naturally grain-free — delicious with fresh berries and coconut yoghurt.
