Coconut sugar is made by evaporating the sap of coconut palm flowers — a minimally processed, unrefined sweetener with a warm, caramel-like flavour reminiscent of brown sugar but with more complexity. These certified organic coconut sugar from Just Natural Organic can be used 1:1 in place of cane sugar in baking and cooking, providing a richer flavour profile and a slightly lower glycaemic index than refined white sugar.
Coconut sugar retains small amounts of iron, zinc, calcium, potassium, and inulin (a prebiotic fibre) from the original sap. Lower glycaemic index than refined sugar (around GI 54 vs GI 65 for white sugar), though still high in sugar — use in moderation.

Replace white or brown sugar 1:1 in baking. Use in hot drinks for a caramel depth. Make caramel sauces. Use in Southeast Asian cooking (palm sugar is traditionally used). Sprinkle over porridge or yoghurt.
Recipe idea — Coconut Sugar Banana Bread: Mash 3 ripe bananas. Mix with 2 eggs, 80ml melted coconut oil, 80g coconut sugar, and 1 tsp vanilla. Fold in 200g plain flour, 1 tsp baking powder, ½ tsp cinnamon, and 50g chopped walnuts. Bake at 175°C for 45–50 minutes. The coconut sugar adds a deeper, more complex caramel note than white sugar — particularly good with banana.

Is coconut sugar healthier than white sugar?
It has a slightly lower glycaemic index (around 54 vs 65 for white sugar) and retains trace minerals and inulin from the coconut sap. However, it is still 90% sugar by weight and should be treated as a sugar — the health benefits over white sugar are modest. The main advantage is flavour complexity and minimal processing.
Does it taste of coconut?
No — despite the name, coconut sugar doesn't taste of coconut. Its flavour is reminiscent of brown sugar or unrefined cane sugar — warm, caramel-like, and slightly molasses-rich.
Can I use it in place of brown sugar?
Yes — coconut sugar has a very similar flavour profile to light brown sugar and can be substituted 1:1 in most recipes.
