Corn flour is finely milled dried maize — a smooth, pale yellow powder with a light, neutral, slightly sweet corn flavour. Naturally gluten-free, it is used as a thickener in sauces, gravies, and custards, and as a baking flour in cornbread, tortillas, and gluten-free recipes.
