Make polenta (1:4 ratio with water or stock, stir 20–30 minutes). Serve as soft polenta with mushrooms, ragu, or cheese. Pour into a tray, cool until firm, slice, and grill or fry for polenta chips. Use in cornbread, muffins, and gluten-free baking.
Recipe idea — Creamy Parmesan Polenta: Bring 1 litre vegetable stock to a boil. Pour in 250g corn semolina in a steady stream, whisking constantly. Reduce to the lowest heat, stir frequently for 25–30 minutes until thick and creamy. Stir in 50g butter and 80g grated Parmesan. Season generously. Serve as a base for mushroom ragu, braised beef, or roasted vegetables. The definitive Italian comfort food.

FAQs
Is corn semolina the same as polenta?
Yes — coarse corn semolina and coarse polenta are the same product. "Polenta" refers both to the raw ingredient and the finished dish. Fine corn semolina cooks faster and produces smoother results; coarse takes longer but has more texture and flavour.
Is corn semolina gluten-free?
Yes — maize contains no gluten. An excellent gluten-free alternative to wheat-based grains for those with coeliac disease or gluten intolerance.
Can firm polenta be grilled or fried?
Yes — this is the classic Italian way to use leftover polenta. Pour cooked polenta into a tray, allow to cool and set for 1 hour in the fridge. Cut into slices and grill, fry, or bake until golden and crispy on the outside while remaining soft inside. Excellent as a base for toppings or as a side dish.
