Dark green speckled lentils — sometimes called Spanish pardina or Continental lentils — are a firm, flavourful lentil that holds its shape beautifully when cooked, with a distinctively earthy, mineral-rich flavour somewhere between green and puy lentils. These certified organic dark green speckled lentils from Just Natural Organic are excellent in salads, grain bowls, and warm side dishes where texture matters.
High in protein, folate, iron, and dietary fibre. Firmer texture than standard green lentils.

Cook 1:2.5 ratio for 25–30 minutes. Use in warm salads, grain bowls, soups, and as a garnish. Excellent with roasted vegetables, mustard dressings, and goat's cheese.
Recipe idea — Speckled Lentil & Roasted Beetroot Bowl: Cook 200g dark speckled lentils 25 minutes, drain. Roast 3 medium beetroots (cubed, tossed in olive oil) at 200°C for 35 minutes. Combine lentils and beets with rocket, toasted walnuts, crumbled goat's cheese, and a mustardy vinaigrette. A striking salad that benefits from the lentils' firm, earthy bite against the sweet beetroot.
