Recipe idea — Classic Pea & Ham Soup: Fry 1 onion, 2 carrots, and 2 celery sticks in butter until soft. Add 250g green split peas, 1 litre vegetable stock, a bay leaf, and a 200g ham hock (or a smoked ham piece, optional — leave out for vegetarian). Simmer 40–45 minutes until peas have broken down. Remove the ham, shred the meat, return to the soup. Season with white pepper and a squeeze of lemon. Serve with crusty bread. A deeply satisfying winter soup that improves overnight.

FAQs
Do green split peas need soaking?
No — split and hulled, they cook without soaking in 30–40 minutes. Soaking for 2 hours reduces cooking time to around 20–25 minutes.
Are green split peas the same as garden peas?
No — green split peas are dried field peas (Pisum sativum var. arvense) that have been hulled and split. Fresh garden peas are a different variety eaten young. Split peas have a much more concentrated, starchy, earthy flavour than sweet fresh peas.
How do they differ from yellow split peas?
Green split peas have a more robust, earthier flavour; yellow split peas are milder and slightly sweeter. Both make excellent soups — yellow is more mild and creamy, green is more robust and complex. Interchangeable in most recipes.
