Mung beans are tiny, dark green, versatile legumes from South and Southeast Asia — the most commonly sprouted bean, used widely in Indian dal (moong dal), Chinese and Vietnamese cuisine, and as the base for glass noodles. These certified organic mung beans from Just Natural Organic are quick-cooking (no soaking required), mildly sweet, and exceptionally versatile.

High in plant protein (24g/100g), folate, manganese, magnesium, and iron. One of the highest antioxidant legumes. Particularly rich in polyphenols including vitexin and isovitexin.

No soaking needed — cook in 30–40 minutes. Excellent as moong dal (split or whole). Sprout for 3–4 days for crunchy mung bean sprouts. Add to soups, stir-fries, and salads. Use in South Asian khichdi (rice and mung bean porridge).

Recipe idea — Moong Dal: Rinse 200g mung beans. Fry 1 onion, 2 garlic cloves, 1 tsp each cumin, coriander, turmeric in ghee. Add beans and 700ml water. Simmer 35 minutes until soft. Finish with a tarka of mustard seeds and dried chilli in ghee. Serve with rice. A deeply comforting, nutritious everyday dal.

How do I sprout mung beans?
Rinse 50g beans, soak 8 hours in cold water. Drain and place in a jar covered with muslin. Rinse and drain twice daily. After 3–4 days at room temperature you'll have crunchy, nutritious sprouts. Refrigerate and use within 3 days.
