Pine nuts are the edible seeds of pine trees — small, ivory-coloured, and intensely rich with a distinctive buttery, resinous flavour that is entirely unique among nuts and seeds. These certified organic pine nuts from Just Natural Organic are the classic European variety (Pinus pinea), sourced from Mediterranean stone pines and hand-harvested from the cones. They are the only nut to contain pinolenic acid — a rare polyunsaturated fatty acid associated with appetite regulation, as it stimulates the production of cholecystokinin (CCK), a hormone that signals satiety.
Pine nuts are a good source of manganese, Vitamin E, magnesium, zinc, and Vitamin K, alongside plant protein and monounsaturated fats. Their small size and intense flavour mean a little goes a long way.

"Pine mouth" (pine nut syndrome) is a temporary condition affecting some people after eating pine nuts, causing a bitter or metallic taste that can persist for days to weeks. It is associated specifically with certain species of Chinese pine (Pinus armandii), not with the European stone pine (Pinus pinea) used in these nuts. European pine nuts are not associated with this condition. Always check the origin on the label.
How should I toast pine nuts?
