Arborio is the classic Italian risotto rice — short, fat, chalky-white grains with a high starch content that releases gradually during cooking to create the characteristic creamy, velvety risotto texture. These certified organic Arborio grains from Just Natural Organic are the essential choice for authentic risotto, where the rice's ability to absorb stock while maintaining a firm centre (al dente) is what defines the dish.
Arborio rice provides thiamine (B1), niacin (B3), and easily digestible carbohydrates. It cannot be substituted in risotto — only Arborio-family rice (Arborio, Carnaroli, Vialone Nano) produces the correct creamy-yet-firm result.

Use exclusively for risotto, rice pudding, arancini (fried rice balls), and suppli. Do NOT rinse before cooking — the surface starch is essential for creaminess. Toast in butter before adding wine and stock.
Recipe idea — Classic Mushroom Risotto: Soak 20g dried porcini in 500ml hot water for 20 minutes. Strain (keep the liquid). Sauté 300g fresh mushrooms with garlic, set aside. In a heavy pan, soften 1 shallot in butter, add 300g Arborio, toast 2 minutes. Add 150ml white wine, stir until absorbed. Add the strained porcini liquid then 600ml hot vegetable stock, one ladle at a time, stirring constantly for 18–20 minutes. Add the mushrooms, a large knob of butter, and 50g Parmesan. Rest 2 minutes, then serve immediately.

Why can I only use Arborio for risotto?
Risotto's creamy texture comes from amylopectin starch that slowly releases from the grain as it cooks with constant stirring. Arborio (and other Italian risotto rice varieties like Carnaroli) have an unusually high amylopectin content and a characteristic chalky centre that absorbs liquid at exactly the right rate. Long-grain or regular short-grain rice cannot replicate this — they either turn mushy or remain undercooked without releasing the creamy starch.
Should I wash Arborio rice before cooking?
No — unlike other rice, Arborio should not be rinsed. The surface starch is essential for creating risotto's creamy consistency. Rinsing would wash away exactly what makes risotto work.
