Rye flakes are rolled rye grains — with a deep, earthy, distinctive flavour that's more robust and complex than oat or barley flakes. These certified organic rye flakes from Just Natural Organic are the traditional ingredient in Scandinavian porridge and dark muesli, adding a pleasantly bitter, malty depth that pairs well with honey, berries, and warm spices.
Rye provides manganese, phosphorus, magnesium, B vitamins, and dietary fibre. It has a lower glycaemic index than most grains due to its pentosan fibre content. Contains gluten.

Cook as porridge (1:3 ratio, 5–7 minutes). Mix into dark Scandinavian-style muesli. Add to bread dough for rye bread flavour without the density of 100% rye flour. Use in granola alongside oats for added depth.
Recipe idea — Scandinavian Dark Muesli: Combine 150g rye flakes, 100g porridge oats, 100g barley flakes, 50g pumpkin seeds, 50g sunflower seeds, 50g dried cranberries, and 2 tbsp flaxseeds. Mix and store in a jar. Soak overnight in milk or yoghurt. Top with fresh berries. The rye gives a distinctively earthy, Scandinavian flavour that's a world away from standard oat muesli.
