Use in gluten-free bread and flatbreads. Make injera-style fermented flatbreads. Use in pancakes, muffins, and cookies — replace 25% of gluten-free flour blend with teff for added flavour and nutrition. Add to smoothies.
Recipe idea — Teff Flatbreads: Mix 200g teff flour with 1 tsp baking powder, ½ tsp salt, and enough warm water (around 150ml) to form a soft dough. Rest 10 minutes. Divide into 6 balls, roll thin, and cook on a dry griddle for 2 minutes per side. Earthy, nutritious flatbreads with more calcium per serving than most dairy products. Excellent with hummus, avocado, or as a wrap.

FAQs
Is teff flour gluten-free?
Yes — teff is naturally gluten-free. Suitable for those with coeliac disease.
What is the difference between white and brown teff flour?
White teff is milder and sweeter; brown teff is darker, earthier, and has a more complex, slightly chocolate-like flavour closer to traditional Ethiopian teff. Brown teff flour produces a darker colour in baked goods. Nutritionally very similar.
Can I use teff flour as a 1:1 substitute for wheat flour?
Not directly — teff lacks gluten, so for bread and cake it works best combined with other flours. For pancakes and flatbreads it can be used alone. In a gluten-free flour blend, 20–30% teff flour adds significant flavour and nutrition.
