Wheat semolina is made from the coarsely ground endosperm of durum wheat — the same high-protein wheat used for pasta — producing a granular, pale yellow flour with a pleasantly gritty texture and a mild, slightly sweet flavour. These certified organic wheat semolina from Just Natural Organic are the ingredient behind authentic Italian pasta, North African couscous, Middle Eastern basbousa cake, and the classic British semolina pudding.
Durum wheat semolina provides protein, selenium, manganese, B vitamins, and iron. Higher protein than standard wheat flour due to durum wheat's hard endosperm. Contains gluten.

Make fresh pasta (mix with eggs and water). Use in Middle Eastern semolina cake (basbousa). Make semolina porridge or halva. Use as a coating for fried foods. Add to bread dough for a crispier crust.
Recipe idea — Basbousa (Egyptian Semolina Cake): Mix 200g semolina, 100g sugar, 100g desiccated coconut, 100ml melted butter, 150ml yoghurt, 1 tsp baking powder, and 1 tsp vanilla. Spread in a greased tin, score diamonds, press an almond into each. Bake at 180°C for 25 minutes until golden. While hot, pour over a simple syrup (200g sugar, 150ml water, 1 tbsp rose water, boiled 5 minutes). Cool before serving. A fragrant, tender Middle Eastern classic.
