Couscous is made from semolina (coarsely ground durum wheat) — tiny, pre-cooked granules that need only a brief soaking in boiling water to prepare, making it one of the fastest-cooking grains available. This certified organic wholemeal couscous from Just Natural Organic is made from wholegrain durum wheat — retaining the bran for significantly more fibre, minerals, and B vitamins than standard white couscous, with a nuttier, more complex flavour.
Higher in fibre, manganese, selenium, and B vitamins than white couscous. Contains gluten.
Certified organic by the Soil Association. Plastic-free. Available in 500g.
Pour boiling water or stock over the couscous (1:1 ratio), cover, leave 5 minutes, fluff with a fork. Use as a base for North African salads (tabbouleh-style), as a side dish for tagines, in stuffed peppers, or as a quick grain bowl base.
Recipe idea — Moroccan Wholemeal Couscous Salad: Cover 200g wholemeal couscous with 200ml hot vegetable stock, cover and rest 5 minutes, fluff with a fork. Add 1 tin chickpeas (drained), roasted cherry tomatoes, cucumber, 50g dried apricots (chopped), fresh mint, lemon juice, olive oil, cumin, and harissa. Toss and serve warm or cold. The wholemeal couscous adds substance and nutrition that white couscous lacks.
