Wholemeal spelt flour is milled from the whole spelt grain — bran, germ, and endosperm intact — giving it a warm, nutty, slightly sweet flavour significantly more complex than standard white flour. These certified organic wholemeal spelt flour from Just Natural Organic are the choice for wholegrain spelt bread, rolls, pizza bases, muffins, and cookies where a more nutritious, flavourful flour is wanted.
Higher in protein, fibre, manganese, and B vitamins than white spelt or white wheat flour. Contains gluten — but spelt's more fragile gluten structure means it needs slightly less working than wheat dough.

Use in spelt bread (the best use — produces a beautifully flavoured, nutty loaf). Make spelt pizza bases, pasta, muffins, and cookies. Replace wheat flour 1:1 in most recipes. Spelt dough is more fragile — avoid over-kneading.
Recipe idea — Simple Spelt Bread: Mix 400g wholemeal spelt flour, 7g fast-action yeast, 1 tsp salt, 1 tsp honey, and 280ml warm water. Knead gently for 5 minutes (spelt needs less kneading than wheat). Shape into a loaf, place in a greased tin, cover and prove 45–60 minutes. Bake at 200°C for 35 minutes. A beautifully nutty, nutritious loaf with a flavour far superior to standard white bread.
