The Ardeche is well known for its Chestnut groves that were planted as far back as the 13th century.

They are picked from the beginning of September through to November, shelled by hand and then cooked

We use several different Chestnut varieties which are cooked whole on fire with the outer skin removed by hand, after which the Chestnut is placed in boiling water and the inner skin removed and essentially artisanal process that aims to preserve the nutritional and taste qualities of the Chestnut.
